An ultrasensitive electrochemical sensor has been developed for the detection and quantification of capsaicin antioxidant in solubilized system based upon electrocatalytic properties of polymer nanocomposite (polypyrrole/Bismuth oxide/Graphene oxide) based sensor. The developed sensor was characterized by scanning electron microscopy (SEM), Energy dispersive X-ray and Electron impedence spectroscopy. This polypyrrole-bismuthoxide-grapheneoxide based sensor exhibited higher stability and excellent electrocatalytic activity toward oxidation of capsaicin in solubilized media. The developed sensor had a dynamic linearity range of 80 to 800 ng/mL with limit of detection (LOD) and limit of quantification (LOQ) of 18 ng/mL and 59 ng/mL respectively. Electrochemical behavior of capsaicin at the developed sensor was investigated by square wave voltammetry. One of the major focus of present research was finding out alternatives to the use of organic solvents with the aim of diverting research toward greener chemistry by using less hazardous solubilizing media.
