NOVELTY - Improving the stability and bioavailability of egg white angiotensin converting enzyme (ACE) inhibitory peptide, comprises (a) adding graphene oxide to water, ultrasonically processing, then adding manganese chloride to obtain mixed solution of manganese(II) ion and graphene oxide; (b) magnetically stirring the mixed solution for a specific period of time, vacuum filtering, and dryingto obtain manganese(II) ion attached graphene oxide sheet, and heating the manganese(II) ion-attached graphene oxide sheets to obtain porous trimanganese tetroxide; and (c) adding the porous trimanganese tetraoxide into water, ultrasonically dispersing, adding active peptide to react for a specific period of time to obtain the reaction liquid, centrifuging the reaction liquid, and freeze-drying to obtain trimanganese tetroxide-active peptide composite powder. USE - The method is useful for improving the stability and bioavailability of egg white angiotensin converting enzyme inhibitory peptide. ADVANTAGE - The method improves the stability and bioavailability of the egg white ACE inhibitory peptide, overcomes its instability in the gastrointestinal tract, and has wide application prospects.
