NOVELTY - Preparing flavor diglyceride oil comprises e.g. adding crude oil, enzyme preparation, chelating agent, placing in shaking table, preserving heat and filtering to obtain degumming solution, where the enzyme preparation is porcine pancreatic tissue, Aspergillus niger, Pichia pastoris and phospholipase, performing vacuum reaction, using gas adsorbent to collect reaction gas, centrifuging and taking oil layer to obtain the reaction product, where the lipase is Aspergillus niger, Rhizopus oryzae, Rhizopus oryzae, Rhizopus oryzae, Rhizopus oryzae, Candida tropicalis and gas absorbent is prepared by taking ordered mesoporous silicon dioxide as base material and loading metal iron ion on surface, distilling reaction product molecule, obtaining heavy phase is diglyceride, mixture of triglycerides, performing molecular distillation, extracting mixture to obtain diglyceride oil, introducing reaction gas collected in step (ii) into diglyceride oil to analyze to obtain flavor glyceride oil. USE - The method is useful for preparing flavor diglyceride oil. ADVANTAGE - The method: can ensure that the water content of the enzymatic degumming is less than 0.2%, does not cause loss of fragrance substance, and has good retention rate of flavor sebum to more than 90%. DETAILED DESCRIPTION - Preparing flavor diglyceride oil comprises (i) adding 800-1200 pts. wt. crude oil, 0.01-0.1 pts. wt. enzyme preparation, 0.1-1 pts. wt. chelating agent, adjusting the water content to 0.1- 0.2 wt.%, cutting at high speed of 1000-5000 revolutions/minutes, placing in the shaking table, preserving heat and filtering at 50-70℃ to obtain degumming solution, where the enzyme preparation is porcine pancreatic tissue, Aspergillus niger, Pichia pastoris and phospholipase; (ii) adding 150-250 pts. wt. glycerol in degumming solution, 40- 60 pts. wt. lipase, performing vacuum reaction at 50-70℃, using gas adsorbent to collect the reaction gas, centrifuging and taking the oil layer to obtain the reaction product, where the lipase is Aspergillus niger, Rhizopus oryzae, Rhizopus oryzae, Rhizopus oryzae, Rhizopus oryzae, Candida tropicalis and gas absorbent is prepared by taking ordered mesoporous silicon dioxide as base material and loading metal iron ion on surface; (ii) distilling reaction product molecule, obtaining heavy phase is diglyceride, mixture of triglycerides, performing molecular distillation for 1-5 times, where each time pressure is ≮5Pa, and heating surface temperature is 165-185℃, and condensing surface temperature is 40-60℃; (iv) extracting the mixture to obtain the diglyceride oil, introducing reaction gas collected in the step (ii) into diglyceride oil to analyze to obtain flavor glyceride oil.
