NOVELTY - Method for preparing fatty acid starch ester by enzymatic method involves constructing a Pickering emulsion system as a reaction system synthesized by starch esterase method, dispersing the dry heat amorphous pretreated starch in ionic solution as water phase, dissolving fatty acid in the organic solvent as oil phase, adding Pickering emulsifier and lipase to prepare Pickering emulsion catalyst system through emulsification, and reacting the system. USE - The method is useful for preparing fatty acid starch ester which is used in field of food, medicine, textile or household chemical (all claimed). ADVANTAGE - The method provides reaction conversion rate of more than 90%. The Pickering emulsion as a microreactor for the synthesis reaction of fatty acid starch ester has both high starch solubility and high enzyme activity retention rate, realizes efficient synthesis of fatty acid starch ester, and is environmentally-friendly, easy to operate, and suitable for large-scale production.
