NOVELTY - Method (M1) for preparing olive kernel extract involves performing pretreatment and extraction using isopropanol-water mixed solution, as extractant, where the volume ratio of isopropanol to water is 70-80:20. USE - The method is useful for preparing olive kernel extract for effectively removing oxygen free radicals in the body. ADVANTAGE - The method extracts phenolic acid, flavonoids, aglycones and other substances in olive kernels and prepares extract which has strong antioxidant effect. DETAILED DESCRIPTION - An INDEPENDENT CLAIM is included for method (M2) for using the olive kernel extract for preparing solid protein beverage, which involves using 30-40 pts. wt. plant protein concentrate, 10-20 pts. wt. olive kernel extract, 5-8 pts. wt. thickener, 5-8 pts. wt. fruit and vegetable powder, 3-5 pts. wt. glucose and 3-5 pts. wt. menthol.
